The Best Way to Store Fresh Herbs (They're Not All the Same)
Wilting cilantro? Slimy parsley? Different herbs need different storage. Here's the complete guide.
Wilting cilantro? Slimy parsley? Different herbs need different storage. Here's the complete guide.
Not all herbs are created equal when it comes to storage. After years of throwing away wilted herbs, here's what actually works.
The Fridge Method (Most Herbs)
Cilantro, parsley, mint:
- Trim stems
- Put in glass of water (like flowers)
- Cover loosely with plastic
- Works for two weeks
This is the single best thing you can do for soft herbs. The water keeps them hydrated, the plastic keeps them from drying out.
For this, a set of glass containers perfect for herbs is essential.
The Counter Method (Hardy Herbs)
Rosemary, thyme, sage:
- Roll in slightly damp paper towel
- Put in open bag in fridge
- Or keep on counter in glass of water
These hardy herbs don't need as much moisture. Too much and they'll rot.
The Worst Mistake
Don't put herbs in the crisper drawer. They get forgotten and rot. Put them front and center in your fridge where you see them.
The Greens Keeper
The OXO Good Grips Produce Keeper extends herb life by two to three times. It has a vent and water reservoir that keeps produce fresh. About twelve dollars.
Fresh vs. Dried
When possible, use fresh. The flavor difference is enormous. But if you need dried, use reputable brands like McCormick.
The Bottom Line
Soft herbs in water, hardy herbs in paper towel. That's it. Your herbs will last twice as long.
