How to Build a Spice Collection From Scratch

Learn to build a flavorful spice collection from the ground up with essential basics, smart storage tips, and expert product recommendations for home cooks.

After years of professional cooking, here's how to build a spice collection that actually gets used. Most home cooks have spices they never touch.

A well-stocked spice cabinet is the foundation of good cooking. Here's how to build one that works.

The Essentials (Must Have)

These 10 spices cover 90% of what I cook:

  1. Salt - Kosher salt for cooking, sea salt for finishing
  2. Black pepper - Whole peppercorns, freshly ground
  3. Garlic powder - For quick seasoning
  4. Onion powder - Quick background flavor
  5. Cumin - Mexican, Indian, Middle Eastern
  6. Paprika - Sweet, smoked varieties
  7. Oregano - Italian, Mexican dishes
  8. Cinnamon - Baking and some savory dishes
  9. Red pepper flakes - Heat on demand
  10. Bay leaves - Soups, braises, rice

The Second Tier (Great to Have)

  • Chili powder
  • Cayenne pepper
  • Italian seasoning
  • Curry powder
  • Turmeric
  • Ginger (ground)
  • Nutmeg
  • White pepper

What to Skip (Most People)

  • Exotic single spices you don't know how to use
  • Pre-mixed 'garlic salt' (just garlic + salt)
  • Anything you bought more than 2 years ago

Storage Tips

  • Keep away from heat and light
  • Use airtight containers
  • Write the date when opened
  • Replace after 1-2 years (ground spices lose potency)

Quality Brands

McCormick is reliable and available.

For specialty spices, Spice Hunter has excellent quality.

Bottom Line

Start with the essentials, add as you cook. Don't buy spices for recipes you haven't made yet.
